Charlotte with Peaches and Coconut

And everyday tea drinking can easily be made solemn. You will need basic products for the biscuit dough, seasonal fruits to choose from, baking additives (vanilla sugar, coconut, baking powder), and in less than an hour, your loved ones will be pleased with a charlotte with a golden crust.

Ingredients

  • Peaches – 2 pcs. + for decoration
  • Flour – 150 g
  • Sugar – 100 g
  • Eggs – 2 pcs.
  • Sour cream 20% – 60 g
  • Vanilla sugar – 5-10 g
  • Ripper – 5 g
  • Salt – 0.5 teaspoon
  • Coconut flakes – 20 g
  • Powdered sugar – 15 g
  • Fresh mint – for decoration

Directions

  1. We prepare products according to the list.
    Instead of peaches, you can take apricots, apples, plums, pears, quince.

    Preheat the oven to 180 degrees.
  2. Combine granulated sugar, salt, and eggs in a bowl.
  3. Beat at the maximum speed of the mixer until whitening, increasing the volume by two or three times, and light foam.
    We introduce thick and fat sour cream and continue beating intensively for a minute.
  4. Ripe, sweet, and fleshy peaches are washed, halved, and pitted. Chop the peach pulp into large cubes.
  5. Dip the chopped peaches into the egg and sour cream mixture, add the aromatic vanilla sugar, as well as the coconut flakes for the texture of the crumb. We mix.
  6. Pour in the sifted flour with baking powder.
    Sometimes baking powder is not added to the charlotte dough – in this case, thoroughly, as for a biscuit, beat the eggs. If you are in a hurry, in doubt, then still add baking powder.
  7. We knead the viscous dough with peaches.
  8. Pour the dough into a fireproof mold (20-22 cm in diameter) and send it to a preheated oven. We bake the peach pie at 180 degrees for 35-45 minutes. Cool the charlotte in a container.
  9. We decorate the charlotte at our discretion, for example, with powdered sugar, peach slices, and mint.
