Chicken Soup with Cheese Balls and Potatoes

The soup according to this recipe is prepared with chicken fillet broth and complemented with mouth-watering cheese dumplings in the form of balls. Such a delicious, aromatic, and hearty chicken soup with cheese balls will appeal to both adults and kids.

Ingredients

  • Chicken fillet – 400 g
  • Potatoes – 450 g
  • Carrots – 120 g
  • Onions – 100 g
  • Vegetable oil – 45 ml
  • Fresh parsley – 25 g
  • Salt to taste
  • Ground black pepper – to taste
  • Bay leaf – 2 pcs.
  • Water – 2.3 L
  • Hard cheese – 100 g
  • Flour – 100-130 g
  • Butter – 50 g
  • Egg – 1 pc.
  • Fresh parsley – 15 g
  • Salt to taste

Directions

  1. We prepare the necessary products.
    We take out the butter from the refrigerator in advance so that it softens.
  2. Cut the chicken fillet into pieces and pour water into a saucepan. Bring water to a boil, remove the resulting foam.
    Reduce heat, add bay leaves, and cook broth for 30-40 minutes.
  3. Grate the cheese on a medium grater.
  4. Finely chop the parsley leaves. Leave some greens for serving the soup.
  5. Cut the butter into small pieces.
    Combine cheese, flour, pieces of butter, egg, parsley, and salt in a bowl.
  6. Knead a soft dough. The consistency of the dough will resemble shortbread. Cover the dough with plastic wrap and refrigerate for 30 minutes.
  7. Peel the onion and cut it into small cubes. Peel and rub the carrots on a coarse grater.
  8. Heat vegetable oil in a frying pan. Fry the onion for about 4 minutes, until transparent.
  9. After that, add carrots to the onion.
  10. Fry onions with carrots for another 4-5 minutes, until golden brown.
  11. Peel the potatoes and cut them into small pieces.
  12. Remove bay leaves from the broth, add potatoes and cook for 10 minutes.
  13. We take out the dough from the refrigerator. We form small balls the size of a small nut.
  14. Add cheese balls to the chicken soup.
  15. Let it boil, reduce heat, and cook soup with cheese balls over low heat for another 8-10 minutes.
    5 minutes before cooking, add salt and black pepper to taste.
  16. The soup with cheese balls is ready. Pour the soup into bowls, add chopped parsley to each serving.
