Ingredients

  • 100 g chocolate, (dark)
  • 2 tablespoon sugar
  • 500 ml milk
  • 45 g cornstarch
  • 600 g sweet cherries, fresh
  • 125 ml port wine, red
  • 75 ml juice, (sour cherry)
  • 12 g cornstarch
  • 200 g cream
  • some chocolate sprinkles

Instructions

  1. Peel, wash and stone the cherries. Remove some of the sour cherry juice and mix with the cornstarch. Bring the cherries to the boil with the port wine and the sour cherry juice in a saucepan. Now pour in the mixed cornstarch and reduce until thick while stirring. Take the pot off the stove and let it cool down.
  2. Remove 3 tablespoons of the milk and mix with the cornstarch and sugar. Melt the chocolate in the rest of the milk, then bring to the boil. Add the mixed cornstarch to the milk, stirring constantly. Keep simmering until the mixture is thick. Remove the pudding from the heat and let it cool down a little, stirring occasionally so that no skin forms. Pour the thickened cherries into glasses and spread the pudding on top. Place cling film on the pudding so that no skin can form. Put the glasses in the refrigerator for a few hours.
  3. Whip the cream very stiff and put in a piping bag with a star nozzle. I put the cream in my isi Whip 0.5l, screwed on a cream cartridge and put the whole thing in the fridge. To serve, screw the tulip nozzle onto the whip. Remove the cling film and squirt the cream onto the chocolate pudding. Sprinkle the dessert with a few chocolate flakes and serve.

  5. You can also make the dessert with chocolate pudding from the packet and cherries from the glass. When using cherries from the glass, the sour cherry juice is dropped and is replaced by the juice from the glass. To do this, you have to drain the cherries in a sieve and collect the juice. Cook the pudding according to the instructions, then proceed as described above.
