Fish in Kindzmari Sauce

Georgian cuisine is always ready to surprise with its possibilities. Tradition and identity make this cuisine a true culinary art. Confirmation of this is the recipe for making marinated fish in “Kindzmari” sauce.

Ingredients

  • Fillet of salmon, chum salmon, or white fish (preferably fatty varieties) – 300 g
  • Bay leaf – 6 pcs.
  • Fresh dill – 6-7 branches
  • Cilantro (leaves and superficial stems) – 80 g
  • Garlic – 1 clove
  • Wine vinegar – 100 ml
  • Salt to taste
  • Pepper mix to taste
  • Water – 200 ml

How to cook fish in Kindzmari sauce:

Directions

  1. We clean the fish from bones and skin, cut into small pieces.
  2. Chop the garlic and cilantro finely.
  3. Pour 1 glass of water into a saucepan, add bay leaves and 6-7 sprigs of dill.
  4. Put the pieces of fish on top of the dill and simmer it over low heat with the lid closed for 5 minutes.
  5. Prepare the sauce: add wine vinegar, salt, and pepper to chopped garlic and cilantro (0.5 teaspoon each). Mix everything well.
  6. Carefully, preferably in one layer, we put the fish in a container in which it will be marinated.
  7. Strain the broth from the saucepan in which the fish was cooked and add to the prepared sauce with cilantro and garlic, mix well.
  8. Fill the fish with the prepared sauce, cover with cling film or a lid. Place the fish in the cilantro sauce in the refrigerator for 5-6 hours.
  9. The fish marinated in Kindzmari sauce is ready.
