Fried Zucchini “Mother-in-law’s Language”

“Spicy and long” “mother-in-law’s tongues” from fried zucchini, with tomatoes, cheese, garlic – an excellent snack for a summer holiday!

Ingredients
- Zucchini (young) – 2-3 pcs.
- Tomatoes – 3-4 pcs.
- Cheese – 200 g
- Garlic – 2 heads (to taste)
- Greens (dill) – 2 bunches (to taste)
- Mayonnaise – 100-150 g
- Eggs – 4-5 pcs.
- Flour – 6-8 tbsp
- Vegetable oil – 100-150 ml
- Salt – 1-1.5 teaspoon (to taste)
Directions
- Wash the young zucchini and cut them into thin slices. There are, I know, craftsmen who cut tongues with a knife. But it will be much easier if you use a slicer.
- When all the zucchini are chopped, salt them and leave for 10-15 minutes.
- Cooking the filling. For this, we cut the cheese into small thin slices.
- Peel the garlic.
- Cut the tomatoes into cubes or slices.
- For the batter, beat eggs slightly.
- First, roll the squash “tongue” in flour.
- Then – in a beaten egg.
- Heat vegetable oil in a frying pan. Fry the zucchini over medium heat – at first about 5 minutes on one side.
- Then 4-5 minutes on the other side. The zucchini slices should be soft.
- We remove the zucchini on a plate. Lubricate with mayonnaise. Put a piece of cheese on one side of the hot zucchini. On the other, a slice of tomato. Then we squeeze the garlic onto the zucchini through a press, distribute some greens.
- Roll up the zucchini, starting from the edge where the tomato slice lies. We spread the zucchini rolls on a plate so that the edge is at the top. From above we stab the “mother-in-law’s tongue” from zucchini with a toothpick.
- The appetizer “Mother-in-law’s tongue” from zucchini is ready. Serve zucchini “Mother-in-law’s tongue” can be both hot and cold.
