Greek Sauce “Tsatziki”

Greek cuisine is varied and very interesting. I’ll tell you how to make the Greek sauce “Tsatsiki”, although many believe that this is a pasty appetizer based on yogurt, cucumbers and various herbs.

Servings: 3-4

Ingredients

  • Cucumbers – 2 Pieces
  • Salt – To taste
  • Dill and Parsley – 1 Bunch
  • Mint – 2 Pieces (twigs)
  • Garlic – 2 Cloves
  • Natural yogurt – 150 Milliliters
  • Granulated Sugar – 1/2 Teaspoon
  • Sour cream – 2 Art. spoons
  • Olive oil – 2 Tbsp. spoons
  • Lemon Juice – 1 Teaspoon
  • Ground black pepper – To taste

Directions

  1. My cucumbers are homemade, with a thin skin and sweet. Carefully wash them from the ground and cut them into small cubes. Sprinkle the cucumbers with salt and set them aside for a few minutes to let the juice stand out, then put them on a sieve.
  2. Pour yogurt into a bowl, add sour cream, lemon juice, olive oil (cold pressed), garlic chopped through a press, sugar, salt and ground pepper, mix.
  3. Dill and my parsley, then chop, combine cucumbers with herbs in a bowl and pour the resulting dressing.
  4. Add a few sprigs of finely chopped mint to the sauce and stir, serve the sauce with pita bread or lavash. It also goes well with meat and fish.
