Ingredients

For the burger buns:

  • 0.5 ½ cube yeast
  • 400 g flour type 405
  • 1 teaspoon sugar
  • 1 teaspoon turmeric
  • 250 ml water, lukewarm
  • salt and pepper

For the patties:

  • 400 g round beef
  • 100 g chorizo
  • salt and pepper

For the sauce:

  • 1 large onion (s)
  • 1 tablespoon oil
  • 1 tablespoon sugar, brown
  • 2 tablespoon tomato paste
  • 2 tablespoons brandy vinegar
  • 150 ml water

Also:

  • 4 plums or plums
  • 8 slices bacon
  • 4 lettuce leaves

Instructions

  1. Dissolve the yeast in lukewarm, sugared water. Knead the yeast water, flour, salt, pepper and turmeric in the food processor to form a homogeneous dough. Then let rise in a warm place for about 30 minutes.
  2. Take the dough out of the bowl, divide it into 4 equal pieces and use a wooden spoon to make a hole in the middle of the dough. Then cover the buns and let them rise for another 15 minutes in a warm place.
  3. Preheat the oven to 200 degrees top / bottom heat and bake the buns for about 30 minutes. Remove from oven and allow to cool.
  4. For the patties, cut the chorizo into small pieces and mix with the ground beef and salt and pepper. Knead the minced meat mixture well. Divide the mixture into 4 equal pieces and shape into patties. Let them rest in the refrigerator for about 30 minutes.
  5. For the sauce, peel the onion, cut in half and cut into fine strips. Sweat in a saucepan with 1 tablespoon of oil until the onions are light brown in color. Add the brown sugar and let it caramelize. Add the tomato paste and sweat briefly. Pour vinegar and water on top and let everything boil down until a thick onion stock is formed.
  6. Heat a grill pan or grill and fry the patties on both sides for about 5 minutes. Add the bacon and fry until crispy. Stone and quarter the plums. At the end of the roasting time, fry them with the meat and bacon for about 2 minutes.
  7. Remove the meat, bacon and plums from the grill or pan and keep warm.
  8. Cut the buns apart and grill them briefly on the cut side.
  9. In the meantime, wash the lettuce leaves and pat dry.
  10. Cover the underside of the bun with the lettuce leaf, place the patty on top, pour the sauce on the meat, spread the bacon over it and place the plums on top. Finish with the top of the bun.
