Hot Sandwiches with Sun-Dried Tomatoes and Zucchini

Hearty crispy sandwiches with an unusual filling of zucchini, fresh tomatoes, and sun-dried tomatoes. And with an appetizing cheese hat!

Servings: 4

Ingredients

  • Bread (baguette, ciabatta, loaf) – 9 slices
  • Zucchini – 220 g
  • Sun-dried tomatoes – 45 g
  • Fresh tomatoes – 200 g
  • Hard cheese – 100 g
  • Vegetable oil – 1 tablespoon.
  • Salt to taste
  • Spices (such as oregano) – to taste
  • Fresh greens (optional) – to taste

Directions

  1. Cut the bread into slices about 1 cm thick.
  2. Dry the slices of bread on both sides in a dry skillet or toaster.
  3. Rinse the zucchini and cut the peel. Cut the zucchini pulp into small cubes (it is advisable to cut the products for the filling as finely as possible).
  4. Fry the zucchini in vegetable oil. The courgettes should be soft.
  5. Rinse the tomatoes, remove the skin and juice with seeds, and finely chop the dense pulp.
    Combine the tomato pulp with the courgettes.
  6. Add very finely chopped sun-dried tomatoes.
  7. Season the filling with salt, add spices to taste (eg oregano).
  8. Put the filling on slices of toasted bread.
  9. Sprinkle the sandwiches with sun-dried tomatoes and zucchini with finely grated cheese on top.
  10. Put the sandwiches with cheese in an oven preheated to 190 degrees for 5-10 minutes.
