Ingredients

  • 1 buffalo mozzarella
  • 1 tomato (s)
  • 1 bunch spring onion (s)
  • 5 tablespoon olive oil
  • 6 slices salami, (Pfedersalami, - alternatively beef salami), cut into thin
  • 150 grams salsiccia
  • 150 g minced pork
  • 1 teaspoon honey
  • 2 tablespoon balsamic vinegar
  • salt and pepper
  • 2 ciabatta
  • 6 basil leaves
  • 2 tablespoon mustard, coarse
  • 2 tablespoon mayonnaise

Instructions

  1. Cut the mozzarella into slices and drain on kitchen paper. Cut the tomatoes into slices. Clean and wash the spring onions and cut in half first crosswise, then lengthways.
  2. Heat 2 tablespoons of oil in a pan and fry the salami slices in it until crispy. Drain on kitchen paper. In the meantime, cut the salsiccia lengthways, remove the sausage meat from the intestines and place in a bowl. Mix with the minced pork and form 2 patties with moistened hands.
  3. Heat 2 tablespoons of oil in a pan and sauté the spring onions for 2 minutes. Add honey, deglaze with balsamic vinegar and reduce almost completely. Season with salt and pepper and set aside.
  4. Heat the rest of the oil in a pan and fry the patties for 4 - 5 minutes on each side. Place the mozzarella slices on the patties just before the end of the cooking time. In the meantime, cut the rolls in half horizontally and bake them in the preheated oven.
  5. Brush the cut surfaces with mustard and mayonnaise. Cover the buns with tomato, spring onions, basil, patties and salami and close with the bun lids.
