Melon Salad with Feta Cheese, Red Onion and Mint

An original salad with melon, feta cheese, red onion, and mint will delight lovers of unusual flavor combinations.
Ingredients
- Melon – 500 g
- Feta cheese – 100 g
- Red onion – 20 g
- Lemon (juice) – 1/3 pc.
- Fresh mint – 1 sprig
- Olive oil – 1 tbsp
- Salt to taste
- Ground black pepper – to taste
Directions
- Prepare the dressing. To do this, squeeze juice from the lemon and mix it with olive oil. Season with salt and black pepper.
- Peel the red onions and cut them into feathers as thin as possible.
Wash mint leaves, dry, and chop finely with a knife. Leave a few mints of leaves whole to garnish the salad when serving. - Cut the flesh of the melon so that boats are made from the rind.
- Cut the melon into cubes and send it to a bowl. Add onion and mint.
- Stir and add the dressing.
- Cut the feta cheese into cubes the same size as the melon.
- Arrange the melon salad with onions and mint over the melon skins. Place feta cubes on top. Garnish with mint leaves and serve immediately.
- Salad with melon, feta, red onion, and mint is ready.
