Boil the milk with the rice pudding to a porridge - allow to cool. Mix the butter with the egg yolk, sugar and lemon zest to a frothy mass, then mix in the cooled porridge, tablespoon at a time. Beat the egg whites into egg whites and fold into the porridge.
