Mint-Vanilla Cheesecake “Daughter’s Order”

My daughter is 2 months in the hospital is not that starving, but you understand – government grubs in our hospitals are unlikely to please anyone (((So she asked me to cook something tasty for her for discharge. The order consisted of 3 dishes, one of which – Cheesecake. It was a must. And she loves the mint cheesecake most of all. So I made it for her)) To speed up the process (time is running out now) I took a ready-made biscuit cake – Viennese.

Ingredients

  • Cake (biscuit) – 1 piece
  • Mascarpone – 600 g
  • Sugar – 0.5 stack.
  • Cream (33%) – 1.5 stack.
  • Gelatin (instant, complete) – 3 teaspoon
  • Vanilla sugar – 1 pack
  • Mint (fresh, large) – 1 bunch.
  • Pineapple (canned in pieces, a little for the filling)

Directions

  1. Prepare all the food to be on hand.
  2. Wash the mint very thoroughly under running water, shake well, and disassemble into leaves. Dry lightly on a towel.
  3. Place the leaves in a blender bowl, pour in 0.5 cups of cream, and grind very thoroughly. Then rub the mass through a sieve.
  4. Pour gelatin with a little water and leave to swell for 10 minutes.
  5. Beat the mascarpone with sugar (according to the norm or to taste, my cake turned out to be not too sweet, not cloying). I took mascarpone because we had a real holiday, I wanted to do something special, but you can take any creamy curd cheese (Almette, President, Viola, Buco, etc.) The main thing is that it should be without additives and must be creamy curd cheese, and not creamy melted).
  6. Pour in the cream and beat well again into a fluffy mass. Dissolve gelatin by heating, pour into the cream, and mix well. Divide the mass into 2 parts. Pour vanilla sugar into one, add the mint puree to the other. Mix both masses well.
  7. Place a ring around the cake and put a circle of baking paper on the bottom. Using a brush, lightly moisten the crust with pineapple syrup.
  8. Scatter the pineapple pieces.
  9. Pour 3 tablespoon each into the center of the cake. l. white and green cream, alternating them.
  10. When all the cream is poured onto the cake, take a piece of wood and apply a pattern. Put the cake in the refrigerator until it hardens completely, preferably at night.
  11. When the cake hardens well, gently run a thin knitting needle or sharp knife along the walls of the ring, and carefully remove it.
  12. Decorate the cake with fresh mint leaves and sugar beads. Or, as your fantasy tells you.
  13. The cake turned out to be very fresh, aromatic, and very tasty.
