Ingredients

  • 250 g strawberries, fresh (or morello cherries, also from the jar)
  • 3 tablespoon sugar
  • 3 medium egg yolks (only from very fresh eggs)
  • 6 tablespoon sugar
  • 1 packet vanilla sugar
  • 1 pinch nutmeg (small )
  • 3 teaspoons cognac (e.g. Chantré)
  • 125 ml cream
  • 1 piece (s) dark chocolate
  • 1 tablespoon almond flakes

Instructions

  1. Clean the fruit, cut in half and sprinkle with sugar. Let it steep for about 15 minutes (if you use strawberries).
  2. For the cream, stir the egg yolks with sugar, vanilla sugar, nutmeg and cognac until frothy. Whip the cream until stiff and fold in. Divide the strawberries or cherries into 4 or 5 dessert glasses and pour the cream over them. Place in the fridge for about 10 minutes.
  3. Use a knife to scrape chips from the chocolate over the portions and serve garnished with the almond leaves.
  4. Tip: This dish is usually made with fresh strawberries. But I always use morello cherries - there are not always strawberries and with cherries this recipe is simply a pleasure.
