Pancake Cake with Chicken, Mushrooms and Cheese

We continue to select recipes for the New Year’s menu! Today it is a snack cake that everyone will get and will conquer all the guests at the festive table! Pancake cake with chicken, mushrooms and cheese – it even sounds delicious!

Ingredients

For the test:

  • Wheat flour – 2.5 cups
  • Milk – 2 cups
  • Eggs – 2 pcs.
  • Sugar – 1 teaspoon
  • Salt – 1 teaspoon
  • Vegetable oil – 60 ml (4 tablespoons)

For filling:

  • Eggs (boiled) – 3 pcs.
  • Hard cheese – 150 g
  • Chicken legs (boiled) – 2 pcs.
  • Pickled mushrooms – 150 g
  • Garlic – 1 clove
  • Salt to taste
  • Ground black pepper – to taste
  • Mayonnaise – to taste

For decoration:

  • Fresh greens – to taste

Directions

  1. For the filling, pre-boil eggs and chicken until tender. Next, prepare the pancake dough.
  2. The process is simple. Combine eggs with salt and sugar, beat lightly.
  3. Add some milk and mix
  4. Pour in all the flour and mix.
  5. Add the remaining milk and stir until smooth. (I always add a thick dough for pancakes, then gradually add milk and bring the dough to the desired consistency. So there will be no lumps in the dough.)
  6. At the very end, add vegetable oil to the dough and mix well. The dough is slightly thicker than for regular pancakes. Let the dough stand for 10 minutes.
  7. From the finished dough in a dry, well-heated frying pan, fry the pancakes on both sides until golden.
  8. Preparing the ingredients for the filling.
  9. Separate the boiled chicken from the bones, chop finely and put in a bowl.
  10. Finely chop the pickled mushrooms and add to the chicken. We leave a few whole pickled mushrooms for decoration.
  11. Rub the cheese on a fine grater, send it to the chicken with mushrooms.
  12. Rub the boiled eggs on a coarse grater, add the filling to the rest of the ingredients.
  13. Add chopped (squeezed through a press) garlic and mayonnaise. Salt and pepper to taste. We mix.
  14. We collect the snack cake on a plate, alternating pancakes with filling. We leave the last pancake without filling. Let the ready-made pancake appetizer with chicken, mushrooms and cheese brew in the refrigerator for about an hour.
  15. The minimum decoration from the remaining mushrooms and chopped herbs, and a snack pancake cake with chicken and mushrooms for the festive table is ready!
  16. This pancake cake with chicken, mushrooms and cheese is perfectly sliced, looks gorgeous in the cut and most importantly, it’s delicious!
