Pancake Casserole with Mushrooms and Cheese

Shrovetide outside the window. Pancakes are already boring. But the pancake casserole, I think, will suit your taste.

Ingredients

  • Thin pancakes – 10 pcs.
  • Champignons – 500 g
  • Bulb onions – 1 pc.
  • Sweet pepper – 1-2 pcs.
  • Fresh tomato – 1-2 pcs.
  • Mozzarella cheese – 350 g
  • Mayonnaise – 100 ml
  • Salt – 0.5 teaspoon
  • Spices for mushrooms – 0.5 teaspoon
  • Butter – 20 g

Directions

  1. Peel the onion, cut into large cubes and fry in hot vegetable oil until transparent.
  2. Wash the mushrooms, cut into slices and fry with mushrooms, salt and add spices, for 7-10 minutes, so that almost all the liquid evaporates.
  3. Cool the mushrooms with onions, transfer to the blender bowl and chop. Pour mayonnaise into the mushrooms and mix until smooth.
  4. Grease the mold with oil. Place the first pancake. Spread it generously with mushroom pate. Sprinkle with grated cheese on top. Top with another pancake. So repeat 2 more times.
  5. Wash the tomato, cut into cubes. Spread out the next pancake over the area. Top with mayonnaise. Sprinkle with cheese. Cover with pancake.
  6. Grease the next two pancakes with mushrooms and sprinkle with cheese in turn.
  7. Grease the seventh pancake with mayonnaise. Wash the pepper, cut into strips or rings, put on a pancake. Sprinkle with cheese.
  8. Grease the eighth and ninth pancakes with mushrooms and sprinkle with cheese. Cover with the last pancake. Sprinkle it generously with cheese.
  9. Send the mold to the oven for 20-25 minutes to melt the cheese. If you don’t like the crispiness, cover the pancake casserole dish with a lid or foil.
  10. Pancake casserole with mushrooms is ready.
