  • 250 g shrimp (s), cooked or crayfish
  • 250 g minced beef
  • 2 shallot (s)
  • 1 clove garlic
  • 1 pinch baking powder
  • 2 slices toast
  • butter
  • pepper

Instructions

  1. Reef and Beef is the Australian version of the American Surf and Turf. The dish consists of a fillet of beef and one or half a lobster. I modified this dish a bit and skewered the considerably smaller ingredients as finger food or party snack on toothpicks.
  2. Cut shallots and garlic into tiny cubes and sauté in a little butter until translucent and let cool. Season the minced meat with salt and pepper, add the baking powder and the steamed cubes and knead thoroughly. Let rest in the refrigerator for about 2 hours.
  3. Cut off the rind from the toast slices and then cut them into 10-15 mm squares. They become the mainstays of the sticker. Heat the butter in a non-stick pan, season with salt and lightly brown the bread on both sides over a medium heat. Drain on paper towels and allow to cool.
  4. Shape the minced meat into balls about 15 mm in diameter and brown in butter all around in a pan over medium heat. Drain on paper towels and allow to cool.
  5. Sort out the best specimens from the prawns or crayfish and skewer prawns, meatballs and bread on toothpicks in order.
  6. Make a few more of them, because these things run at every party.
