Sandwiches With Mushrooms and Cheese

Sandwiches with mushroom filling are so tasty that they can be eaten with lightning speed! Juicy and aromatic filling for sandwiches is made from mushrooms fried with onions, fresh herbs and cheese. Almost a win-win!

Ingredients

  • White bread (toast) – 8 slices (180 g)
  • Champignons – 190 g
  • Onions – 60 g
  • Hard cheese – 50 g
  • Fresh parsley – 15 g (4-5 sprigs)
  • Dried thyme – 1/2 teaspoon
  • Salt – 1/2 teaspoon
  • Ground black pepper – on the tip of a knife
  • Vegetable oil (for frying) – 3-4 tablespoons

Directions

  1. Peel the onion and cut into small cubes. Heat 1 tablespoon in a skillet. spoon of vegetable oil and put the chopped onion. While stirring, fry the onion over medium heat for about 3-4 minutes, until translucent and light golden brown.
  2. Rinse the champignons. Cut off dark spots and refresh the cut on the stem of each mushroom. Cut the prepared mushrooms into thin slices. I have rather large mushrooms, so I cut each mushroom in half beforehand.
  3. Add chopped champignons, salt, thyme, black pepper to the pan with onions. Stirring, fry over high enough heat so that the mushrooms are slightly browned and the juice that has evolved evaporates.
  4. Rinse the parsley, dry, remove the stems, and finely chop the leaves.
    Grate the cheese on a coarse grater.
    Add grated cheese and chopped parsley to the pan.
  5. Stir the contents of the pan and remove from heat.
  6. Take another clean dry frying pan, grease or sprinkle with a little vegetable oil and put on heat. Fry the bread slices over medium heat, about 1-2 minutes on each side, until lightly browned. Put the toasts on a plate and cool slightly.
  7. Spread the mushroom filling evenly on four of eight slices of bread.
  8. Place a second slice of bread on top of the mushroom filling, forming sandwiches. Press lightly on top of each sandwich with your palm.
  9. Sprinkle the frying pan where the bread was fried again with vegetable oil and put on heat. Fry the sandwiches over medium heat, about 2-3 minutes on each side, until they are delicious.
  10. Serve hot or warm prepared sandwiches immediately after cooking.
