Scrambled Eggs with Cheese and Pickles (Simple)

It’s amazing how ordinary scrambled eggs can sparkle with new colors, you just have to show your imagination a little! Seemingly, with such simple ingredients as cheese and pickled cucumber, the scrambled eggs turn out to be quite unusual! An original and delicious breakfast guaranteed!

Ingredients

  • Eggs – 2 pcs.
  • Pickled cucumber – 1 pc. (80 g)
  • Hard cheese – 40 g
  • Sour cream – 1 tbsp
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil (for frying) – 2 tbsp

For the filling (optional):

  • Fresh dill – 2-3 branches

Directions

  1. Grate the pickled cucumber on a fine grater and lightly squeeze the juice. Grate hard cheese on a fine grater. Heat vegetable oil in a skillet. Place the grated cheese and pickled cucumber in the pan.
  2. Fry the cheese and pickles over medium heat, stirring occasionally for about a minute. Divide the eggs carefully into whites and yolks. Set aside the yolks for now, and add salt, black pepper, and sour cream to a bowl of proteins.
  3. Whisk the protein mixture with a fork or small whisk. Pour the protein-sour cream mixture over the fried cheese with pickled cucumber. Place the yolks on top of the protein mixture immediately.
  4. Cover the skillet with a lid and cook the eggs over low heat until the yolks are cooked through (about 8 minutes). While the eggs are cooking, rinse the dull, dry, and chop. Sprinkle the cooked eggs with dill.
  5. Scrambled eggs with cheese and pickles are ready. Serve the scrambled eggs immediately after cooking. Bon Appetit!
