Simple Vegetarian Borscht

Ingredients

  • Beets – 1 pc.
  • Potatoes – 3-4 pcs.
  • Fresh cabbage – 300 g
  • Beans – 1 glass
  • Carrots – 1-2 pcs.
  • Bulb onions – 1 pc.
  • Tomato paste – 1-2 tablespoon l
  • Bulgarian pepper – 1 pc.
  • Greens to taste
  • Salt to taste
  • Pepper to taste
  • Sugar – 1 teaspoon
  • Flour – 1 tbsp
  • Vegetable oil – 50 g

Directions

  1. Soak the beans the night before. Drain the water in the morning. Pour cold water and boil the beans until tender (1-1.5 hours).
  2. Peel and wash potatoes, carrots, onions, beets, and peppers.
  3. Dice the onion. Grate carrots on a coarse grater. Cut the peppers and beets into strips. Cut the potatoes into cubes.
  4. Boil 3 liters of water, put the beets. Cook for 15 minutes. Then lower the potatoes. Cook for 20 minutes.
  5. Pour in vegetable oil. Fry over medium heat, stirring occasionally, onions and carrots for 4-5 minutes. Add 1 tablespoon. a spoonful of flour, mix. And then add the tomato paste. Simmer, stirring occasionally, for 1 minute. Add frying to the borscht.
  6. Chop fresh cabbage. Add bell pepper and cabbage to the borscht. Season with salt and pepper. Add sugar.
  7. Cover the borscht with a lid and simmer for 15-20 minutes over low heat.
  8. Add cooked beans 10 minutes before the end of cooking.
  9. Add greens to the finished borscht. Enjoy your meal!
