Snack Balls Made From Boiled Beets, Prunes and Nuts

Beets combine perfectly with nuts, prunes and garlic, turning into a healthy, tasty and vitamin-rich snack, the taste of which is familiar to many. Often such an appetizer is a salad, but if you show a little imagination and form balls from the beetroot mass, and then roll them in dill, you will get a more spectacular dish worthy of a festive table!

Ingredients

  • Beets – 250 g
  • Prunes – 50 g
  • Walnuts (kernels) – 50 g
  • Garlic – 1 clove
  • Mayonnaise – 1.5 tbsp
  • Fresh dill – 1 bunch
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Prepare all ingredients. Boil the beets until tender (about 40 minutes), cool. Walnut kernels can be pre-fried in a dry frying pan or in the microwave
  2. Peel the cooled beets.
  3. Then grate the beets on a fine grater.
  4. Squeeze the juice out of the grated beets. Put the beet cake in a bowl. You don’t need beet juice.
  5. Peel the garlic and pass through a press or chop with a knife. Add the garlic to the beets.
  6. Rinse the prunes and transfer to the bowl of a blender or food processor.
  7. Add walnut kernels to the prunes.
  8. Grind prunes with nuts into fine crumbs.
  9. Place chopped nuts and prunes in a bowl with beets and garlic.
  10. Add salt and black pepper, and add mayonnaise.
  11. Stir the beetroot mixture.
  12. Rinse the dill, dry thoroughly, and then chop.
  13. Form medium-sized balls of the beetroot and roll in chopped dill.
  14. Place the beet balls on a plate as they form. I got 5 snack balls.
