Snack Rolls with Baked Vegetables and Cheese

These snack rolls are stuffed with baked vegetables and feta cheese.

Serving: 4

Ingredients

  • Bulgarian red pepper (cut into 8 parts) – 1 pc.
  • Eggplant (cut into 8 parts) – 1 pc.
  • Zucchini (cut into 8 pieces) – 1 pc.
  • Red onion (cut into 8 slices) – 1 pc.
  • Feta cheese – 150 g
  • Extra virgin olive oil – 1/4 cup
  • Garlic (minced) – 1 clove
  • Mint (chopped) – 1 bunch
  • Tortilla or small pita bread – 4 pcs.
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Turn on the oven to preheat to 210 degrees. In a baking sheet with high sides, mix all the vegetables with olive oil and garlic, sprinkle with salt and pepper, mix well. Place the baking sheet in a preheated oven and bake the vegetables for about 15-20 minutes, until golden brown.
  2. Cut the cheese and then crumble, add together with the mint to the baked vegetables, mix.
  3. Heat a frying pan or a regular thick-walled pan over high heat until smoke appears. Fry the tortillas for a few seconds (fry one cake at a time). Transfer the tortillas to the board.
  4. Put the baked vegetables on the tortillas (lavash) and roll up. Serve the snack rolls immediately.
