Strawberry Muffins

This strawberry muffin recipe isn’t exactly your usual one. The dough is prepared not only from butter, milk, eggs and flour – healthy oatmeal “hides” in these mouth-watering strawberry muffins.
Ingredients
- Flour – 1 ¼ cup
- Baking powder – 2 ½ teaspoon
- Salt – ½ teaspoon
- Oatmeal – 1 glass
- Sugar – ½ cup
- Milk – 1 glass
- Butter, melted – ½ cup
- Egg – 1 pc.
- Vanilla extract – 1 teaspoon
- Fresh strawberries, chopped – 1 cup
Directions
- Preheat oven to 200 degrees. Lubricate 12 muffin cups (or use corrugated paper cups).
- Combine the sifted flour, baking powder and salt. Add oatmeal and sugar. Stir in milk, butter, lightly beaten egg and vanilla separately. Gradually adding dry ingredients to the egg-cream mixture, mix everything until smooth. Add the strawberries and place the dough in the tins, filling 2/3 full.
- Bake the strawberry muffins for 15-20 minutes (check if the muffins are done with a toothpick). Cool muffins on a wire rack for 10 minutes.
- Serve warm or cold strawberry muffins with milk or tea.
