Ingredients

  • 1 chicken, approx. ,200 g

For the filling:

  • 1 onion (s)
  • 2 cloves garlic
  • 1 roll (s), stale
  • 125 ml milk
  • 2 egg (s)
  • 4 stalks parsley

Also:

  • 1 bunch soup vegetables
  • 1 teaspoon broth, instant
  • 1 pinch salt
  • 1 pinch pepper
  • 1 tablespoon, heaped paprika powder, noble sweet
  • 2 tablespoon, leveled clarified butter

Instructions

  1. For the filling, heat the milk and soak the bread roll in it. Peel and finely chop the onion and garlic, sauté in the hot clarified butter. Chop the parsley and add it. Squeeze the bread roll soaked in the milk and pull it apart. Mix with the onion mixture to form a dumpling and remove from the heat.
  2. Separate the eggs. Let the mixture cool down a little, then stir in the egg yolks. Beat the egg white into snow and fold in. Season to taste with salt, pepper and paprika.
  3. Meanwhile preheat the oven to 180 degrees.
  4. Wash the chicken, rub dry and season inside and out. Put the filling in the chicken. Carefully peel but not remove the skin on the sides of the chicken. Slide some of the filling under the skin on the left and right.
  5. Roughly chop the soup vegetables. Place the chicken in a roasting pan (casserole) and add the vegetables on the side. Now dissolve the broth in approx. 250 ml. Water and pour in, I simply add the second clove of garlic. If there is still filling left, distribute it on the side of the roasting pan.
  6. Put the lid on and simmer in the oven for about 45 minutes. Then fry for another 20 minutes without the lid to brown, pouring the liquid over and over again. Then turn it over and fry the other side for approx. 20 minutes. Depending on the oven, you have to check again and again how long the chicken will need.
  7. Cut the chicken apart with the poultry shears and serve. Possibly serve with the vegetables.
  8. Everything goes with the side dish here. If necessary, cook a sauce from the liquid.
  9. We don`t need any sauce and I pour the liquid into a glass and freeze it.
