Rooster Tail Appetizer

A bright, festive appetizer for the New Year’s table, in the form of a symbol of the 2017 New Year’s season – the Rooster, or rather its multi-colored tail. These are pancake rolls with redfish and a “Greek” appetizer on skewers.

Ingredients

  • For an appetizer (rolls) with redfish:
  • Pancakes, thin, unsweetened – 3 pcs.
  • Salted red fish (salmon, trout, pink salmon, chum salmon) – 100 g
  • Cream cheese (like mascarpone or ricotta) – 100 g
  • Parsley (or dill) greens – 1 sprig
  • For the Greek snack (for 6 skewers):
  • Feta cheese – 30 g
  • Fresh cucumber – 1 pc.
  • Cherry tomatoes – 3 pcs.
  • Olives (black olives) – 6 pcs.

For decoration:

  • Salted crackers
  • A tomato
  • Olives

Directions

  1. Prepare the ingredients for the Rooster Tail New Year’s Eve snack, which includes pancake rolls with redfish, cream cheese and herbs. Thin pancakes for rolls can be prepared in advance according to any recipe or you can buy ready-made ones.
  2. For rolls, spread the cream cheese on the pancake in a thick layer, all over the surface.
  3. Place a slice of boneless salted fish fillet and a few parsley leaves. Roll the pancake into a roll.
  4. Cut the pancake roll into pieces, diagonally.
  5. Prepare the ingredients for the Greek Snack, which is similar in ingredients to the famous Greek Salad.
  6. On a skewer, alternately put an olive, a piece of cucumber, half a cherry tomato and a cube of feta cheese.
  7. Do this with each skewer.
  8. Layout in a semicircle first the skewers with the “Greek” appetizer, and then the pieces of pancakes with fish.
  9. Make a cockerel from salted crackers, tomato, and olives and attach it to the tail.
  10. New Year’s snack for the Year of the Rooster is ready.
  11. Serve the Rooster Tail appetizer on New Year’s table.
