Ingredients

  • 4 medium spring onion (s), cleaned
  • 4 slices garlic, sliced very thinly and finely chopped

For the marinade:

  • 2 teaspoons elderflower syrup, alternatively honey
  • 2 teaspoons white wine vinegar
  • 1 teaspoon lemon juice
  • 2 pinch (s) chili salt
  • 1 pinch (s) pepper
  • 1 tablespoon truffle oil or neutral oil
  • some lemon zest

Instructions

  1. Cut the garlic into very fine slices and chop finely. Mix with elderflower syrup, white wine vinegar, lemon juice, chilli salt, lemon zest and pepper. Let the oil flow in slowly and whip up a bit.
  2. Cut the cleaned spring onions into very fine slices and mix completely with the marinade. Fresh or dried herbs can be added according to personal taste. Let it steep for a few minutes before serving.
