Ingredients

  • 2 chicken breasts
  • 2 clove (s) garlic, ground
  • 3 teaspoons peppercorns
  • 8 clove (s) garlic, minced
  • 4 tablespoon oyster sauce
  • 2 tablespoon soy sauce
  • 1 teaspoon sugar
  • 6 tablespoon vegetable oil, e.g., peanut oil
  • Coriander, optional

Instructions

  1. 2 to 3 teaspoons of peppercorns, depending on how spicy you like them, crushed with 1 to 2 cloves of garlic in a mortar.
  2. Cut the chicken into thin strips.
  3. Mix the chicken with pepper and garlic. Add the sugar, soy sauce and oyster sauce. Mix well and let marinate for about 20 minutes.
  4. Finely chop 6 to 8 cloves of garlic. Fry in about 2 tablespoons of oil until golden brown. Be careful not to let the garlic get too dark. Set aside the crispy garlic cubes and keep warm.
  5. Heat the remaining oil strongly and fry the marinated chicken in it until golden.
  6. When serving, spread the crispy garlic over the chicken, optionally sprinkle with coriander.
  7. Basmati or jasmine rice goes well with it.
