The Original Kish Lauren

Quiche “Lauren” – French open shortcrust pastry pie stuffed with eggs, cream, milk, and cheese with various additives. Smoked fish or bacon is often added to it. The quiche is served hot, garnished with a green salad.

Cook: 1 hour 30 minutes

Servings: 6

Ingredients

For filling:

  • 150 g Swiss cheese
  • milk – 150 ml
  • large egg – 3 pcs.
  • 200 g smoked salmon
  • 250 ml cream, 10% fat
  • vegetable oil – 1 tablespoon.
  • a pinch of ground nutmeg

For the test:

  • flour – 1.5 cups
  • butter – 100 g
  • eggs – 2 pcs
  • salt – a pinch
  • chilled sour cream – 2 tbsp

Directions

  1. Soften the butter at room temperature, then cut it into cubes. Combine flour, butter, eggs, salt, and knead to a smooth shortbread dough. If the dough crumbles, add 1-2 tbsp water or milk (you can do both).
  2. Roll out the dough 3-5 mm with a rolling pin. Place in a mold and form aside.
  3. Preheat oven to 180 degrees. Cover the dough with parchment and cover with cereals or legumes (beans, lentils) so that the dough begins to bake and does not swell. Place the bean dough in the oven for 20 minutes.
  4. Prepare the filling. Finely chop the onion and bacon. Crack the egg with a fork and mix with cream, milk, and spices. Grate the cheese.
  5. Remove the dough from the oven, remove the parchment. Arrange the onion and bacon, cover with the milk-cream mixture. The mixture should cover the filling. Place in the oven for 10 minutes. Remove the pie from the oven, sprinkle with hard cheese, and let sit for another 10 minutes.
