Tortillas on Kefir, with Cheese and Herbs (in a Dry Frying Pan)

I suggest making tortillas with cheese and herbs, fried in a dry pan. This is a simple, tasty and easy to prepare dish that will please the whole family. These tortillas make a great breakfast, lunch, dinner, or snack throughout the day.

Ingredients

For the dough:

  • Flour – 400-600 g + for rolling flat cakes
  • Kefir (or yogurt) – 250 ml
  • Salt – 0.5 teaspoon
  • Sugar – 1 teaspoon
  • Soda – 0.5 teaspoon
  • Egg – 1 pc.

For filling:

  • Adyghe cheese – 250 g
  • Suluguni cheese – 250 g
  • Egg (raw) – 1 pc.
  • Dill greens – 40 g
  • Parsley – 40 g
  • Salt (optional) – to taste
  • Spices (optional) – to taste

For greasing finished cakes:

  • Butter

Directions

  1. Sift 350 g of wheat flour into a bowl, add salt, soda, sugar, eggs and kefir at room temperature.
  2. Stir and, gradually adding the remaining flour, knead the dough. You may need a different amount of flour, since kefir can be slightly thinner or thicker. The dough should be soft and pliable. It is not necessary to hammer heavily with flour, otherwise the cakes will be difficult to roll out, but the dough should not stick to the hands and the table.
  3. Leave the dough to swell the gluten for about half an hour.
  4. Prepare the filling of cheese and herbs. I took suluguni and Adyghe cheese, you can take any greens and any cheese that you have in stock. Grate the cheese. Finely chop the washed and dried greens.
  5. Mix the cheese and herbs together by adding a raw egg. If the filling is not salty enough, add salt to taste. You can add your favorite spices.
  6. Form 8 balls from the filling.
  7. Divide the dough into 8 equal parts, form balls.
  8. Form cakes. Each piece of dough must be spread out, sprinkled with flour if necessary. Put the prepared ball of filling inside, then collect the edges of the dough to the middle in the form of a bag and pinch tightly. There should be no air in the middle of the cake. Then very carefully roll it out with a rolling pin to the dia of your pan, but not thicker than 5 mm.
  9. Shake off excess flour from the flatbread and put in a dry frying pan without oil. Fry the tortilla over medium heat until tender, about 2 minutes on each side. When frying, the cake inflates, it can be pierced with a knife or fork.
  10. Grease the finished hot cake with butter on top. We do the same with all the cakes.
