Vegetarian Snack

This vegetarian snack is made with fried vegetables and hummus. Served appetizer in flat cakes.

Servings: 4

Ingredients

  • Red onion (chopped) – 4 slices 1 cm thick
  • Bulgarian red pepper (cut into quarters) – 1 pc.
  • Eggplant (cut into slices 1 cm thick) – 1 pc. (300 g)
  • Hummus – 230 g
  • Olive oil – 2 tbsp
  • Fresh parsley (chopped) – 0.25 cups
  • Salt – 1/8 teaspoon.
  • Pita or small pita bread – 4 pcs.
  • Feta cheese (crumbled) – 60 g

Directions

  1. Heat the grill pan over medium-high heat. Grease onion, bell pepper, and eggplant with 1 tablespoon of olive oil. Place the onions and bell peppers in a frying pan, fry for about 3 minutes on each side. Transfer to the board.
  2. Place the eggplant slices in the same skillet and cook for about 3 minutes on each side. Transfer the eggplant to a board and coarsely chop all the vegetables.
  3. Place the fried vegetables in a bowl, add 1 tablespoon of olive oil, parsley, and salt, mix well.
  4. Grease each tortilla with ¼ cup hummus, leaving 1 cm empty on each end. Put the fried vegetable salad on the prepared flatbread and sprinkle each serving with 2 tablespoons of cheese. Roll up the cakes and cut each in half. Vegetarian appetizer ready to serve.
