Very Best Coconut Cookies

Ingredients

For the dough:

For painting:

2 egg yolks
2 teaspoons milk

For covering:

3 egg whites
100 g suar
175 g desiccated coconut
2 drops bitter almond flavor

Instructions

For the dough, knead all the ingredients until smooth. If it sticks, wrap it in foil and put it in a cool place for a while. Roll out thinly on the floured work surface and cut out stars in 2 different sizes (same number of each size). Place the larger stars on a baking sheet lined with baking paper.
To brush the egg yolk, whisk with the milk and brush the larger stars with it.
For the topping, beat the egg whites very stiffly. Gradually pour in the sugar. Carefully fold in the desiccated coconut and flavor.
Pour the mixture into a piping bag with a star nozzle and spray onto the large stars. Brush the small stars with the rest of the egg yolk milk and place them diagonally against the coconut mixture.
Bake in the preheated oven at 200 ° C for about 10 minutes. Place the cookies on a wire rack with the baking paper and let them cool.
