Zucchini Pizza

Zucchini pizza is a very interesting, simple, but insanely delicious dish from the available products. Zucchini pizza is a kind of vegetable casserole, only incredibly tender and juicy. And it is called pizza exclusively due to the similarity with the Italian dish of the same name.

Ingredients

  • Zucchini – 1-2 pcs.
  • Tomatoes – 1-2 pcs.
  • Mushrooms (champignons) – 100 g
  • Green onion – 5 stalks
  • Hard cheese – 50 g
  • Chicken eggs – 2 pcs.
  • Flour – 1.5 tbsp
  • Baking powder – 0.5 teaspoon
  • Vegetable oil – 1 tbsp
  • Breadcrumbs – 1 tbsp
  • Spices to taste
  • Greens to taste

Directions

  1. To make zucchini pizza, wash and dry all vegetables. I peel the zucchini from the peel, seeds and rub it on a coarse grater.
  2. Add the grated zucchini and let it stand for 15 minutes to release the liquid. The liquid must be poured out by squeezing the grated zucchini well. I rub the cheese on a fine grater. I clean the mushrooms and cut them into thin slices. Finely chop greens and onions. Cut the tomatoes into slices.
  3. I add eggs, onions, herbs, flour, and baking powder to the grated zucchini, season with spices, mix well.
  4. I grease the form with vegetable oil and sprinkle with bread crumbs. Pour the zucchini mixture onto the crackers and distribute it evenly over the entire surface.
  5. I put chopped mushrooms and tomatoes on top, sprinkle with grated cheese, and put the zucchini pizza in the oven, preheated to 180 degrees, for 20 minutes.
  6. I take out the finished “pizza” from the zucchini from the oven, let it cool down a bit, and only then take it out of the mold onto a dish. Sprinkle the vegetable casserole with grated cheese on top. Cut into portions and serve the treat.
