Mini Pizza with Ham and Zucchini

These mini pizzas are prepared on small buns, which makes the finished dish very convenient to serve.

Ingredients
- Champignon mushrooms (cut into slices) – 3 pcs.
- Zucchini (cut into circles) – 1/2 pc.
- Ham – 6 slices
- Cheddar cheese (shredded) – 1 cup
- Red onion (cut into strips) – 1/2 pc.
- Burger buns (whole grain or regular) – 3 pcs.
- Tomato paste – 2 tbsp
- Pesto sauce – 2 tbsp
- Olive oil – 1 tbsp
- Cherry tomatoes for serving (optional)
Directions
- Cut the buns in half and fry in a toaster (roaster) or in the oven under the grill, let cool slightly.
- In a small bowl, combine the pesto sauce with the tomato paste and brush over all the bun halves.
- Heat olive oil in a large skillet over medium heat. Pour onions, mushrooms, and zucchini into a preheated pan. Fry, stirring occasionally until vegetables are soft and slightly discolored.
- Switch on the oven with grill function to preheat to high temperature. Place the fried vegetables on the bun halves, top with the ham slices and sprinkle with cheese. Place the buns under the grill and cook for 3-4 minutes, until the cheese melts. Serve mini pizzas immediately.
