  • 100 ml sherry, or port wine
  • 0.5 teaspoon ½ citric acid
  • 500 g preservin suar, 3: 1

Instructions

  1. Charentais melons are the ones with the dark orange flesh.
  2. The melons are peeled, which results in about 1.5 kg of pure pulp. This is cut into pieces and mashed with a magic wand, then mixed with the citric acid and sugar. Let it steep for about 1 hour.
  3. Bring the fruit pulp to the boil and boil for 4 minutes, remove from the stove and stir in the sherry or port wine, immediately pour into glasses, close and turn upside down.
