Cold Soup with Smoked Herring

This cold soup with smoked herring is more suitable for the hot season, when, first of all, you want not to get enough, but to cool down. The taste of the original fish soup resembles okroshka, light, and dietary. The soup contains a lot of fresh herbs, the basis is kefir with carbonated water. But smoked fish adds a peculiarity to the taste of the dish and to its aroma!

Ingredients

  • Large smoked herring – 3 pcs.
  • Fresh cucumber – 1 pc.
  • Fresh dill – 5 branches
  • Green onions – 3 pcs.
  • Kefir – 120 ml
  • Sour cream – 1 tbsp
  • Highly carbonated water – 300 ml
  • Mustard (ready-made seasoning) – 0.5 teaspoon
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Pour kefir into a saucepan, add sour cream and mix thoroughly with a whisk.
  2. Add salt, black pepper, and mustard to the kefir-sour cream mixture.
  3. Stir the mixture again with a whisk.
  4. Remove the skin from the cucumber, cut off the edges. Grate the cucumber on a coarse grater directly into the kefir mixture.
  5. Wash the dill and green onions, chop finely.
  6. Add greens to kefir soup.
  7. Disassemble the smoked herring into fillets: remove each fish’s head, entrails, ridge. Remove the skin from the resulting files – it is tough, it will only be superfluous in the soup.
  8. Add smoked herring to the kefir mixture with cucumber and herbs.
  9. Now pour in sparkling water. With the amount of water, you can adjust the thickness and saturation of the soup at your discretion.
  10. Stir and refrigerate for 30 minutes.
