Ingredients

  • 50 g butter
  • 50 g cream
  • 0.5 teaspoon ½ lemon juice
  • 2 egg yolks, beaten
  • 0.5 teaspoon ½ mustard
  • 0.5 teaspoon ½ salt
  • 0.5 teaspoon ½ sugar
  • 1 tablespoon tarragon, dried

Instructions

  1. Melt the butter. Mix all other ingredients, except for the tarragon, with a mixer and heat. Then gradually stir in the melted butter, continue to heat and stir until the sauce is smooth. Fold in the tarragon and season to taste.
