Ingredients
- 600 g potato (s), mainly waxy
- 200 g quark
- 200 g wheat flour type 405
- 2 egg (s)
- 50 g raisins
- 2 cl rum
- 2 tablespoon, leveled cane sugar
- 1 pinch (s) salt
- 1 pinch (s) nutmeg

- Boil the potatoes in their skins. Then let it cool down well. Meanwhile, soak the raisins in rum for half an hour.
- Peel the potatoes and mash them into a puree. Then mix with quark, eggs and flour. Season to taste with sugar, salt and nutmeg. Let the mixture rest for half an hour. Then fold the raisins into the mixture.
- Shape the dough into the size of a palm of your hand and bake in a pan with rapeseed oil over medium heat on both sides for 3 - 4 minutes.
- The quark legs taste best with applesauce and a little cane sugar.
