Ingredients
- 330 g wheat flour, type 550
- 6 grams salt
- 20 g yeast
- 10 g butter
- 185 g water
- 10 g rye flour
- 200 g double cream cheese, or creme fraiche
- 50 g ham, smoked, diced
- 100 g cheese, rated (e.. Gouda)
- 1 bunch chives

- A pretzel solution (caustic soda) is required.
- Mix the flour, salt, yeast, butter, water and rye flour with the dough hook to a relatively firm dough (mixing time 8-10 minutes). Then divide into portions of approx. 60 g, shape into elongated sticks, flatten them a little and let rise for 30 minutes at room temperature.
- Then make a recess in the middle of the dough pieces for cheese and ham. Dip each stick of dough in pretzel solution and then place on a baking sheet with parchment paper.
- Now put the cream cheese in the wells, then the diced bacon, and finally the grated cheese. Instead of cream cheese, I`ve also used crème fraîche, which also tastes very good.
- Bake in the preheated oven at 250 ° C top / bottom heat for about 15 minutes.
- Sprinkle with chives after baking.
