Hummus with Baked Peppers and Sun-Dried Tomatoes

If you know a delicious and satisfying hummus snack, then you know that its main ingredient is boiled chickpeas. But it can be prepared in a new way by adding baked bell peppers, sun-dried tomatoes, spices.

Servings: 8-10

Ingredients

  • Chickpeas – 300 grams (boiled)
  • Bulgarian pepper – 1 Piece (red, large)
  • Sun-dried tomatoes – 8-10 Pieces
  • Garlic – 1 Clove
  • Olive oil – 50 Milliliters
  • Lemon juice – 2 Tbsp. spoons
  • Zira – 1/2 Teaspoon
  • Pink pepper – 1/2 Teaspoon
  • Vegetable broth – 1/2 Cup

Directions

  1. To boil chickpeas, it should be soaked in cold water for 8 hours in advance, then drained. Then boil under a closed lid in plenty of water for 1.5 hours. Leave some broth to dilute hummus.
  2. Wash the pepper, wrap in foil, bake in the oven at 180 ° C for about 1 hour. Peel, remove seeds.
  3. Combine chickpeas, peppers, sun-dried tomatoes, olive oil, minced garlic, spices, salt and lemon juice in a chopper. Punch until smooth. Add some vegetable stock if needed. Cool the finished hummus. It can be covered and stored in the refrigerator for up to 3 days.
  4. Serve the ready-made snack with slices of bread, crisp bread, or fresh vegetables.
