Juicy Chicken Fillet with Vegetables (in the Oven)

Juicy chicken fillet baked in the oven with vegetables is a wonderful dish for a family dinner. Cooking chicken under vegetables, in the oven, is healthy and convenient. The combination of meat with plant products is classic in healthy eating. The finished dish contains both meat and a side dish, so you don’t need to invent anything additional to dinner.

Ingredients

  • Chicken fillet – 600 g
  • Tomatoes – 250 g
  • Bulgarian pepper – 120 g
  • Carrots – 100 g
  • Onions – 130 g
  • Cheese – 150 g
  • Mayonnaise – 3-5 tablespoon
  • Vegetable oil – 2-3 tablespoon.
  • Spices to taste
  • Salt to taste
  • Broth or water – 50 ml

The beauty of poultry meat is that it has a neutral taste. That is why a recipe for chicken with vegetables, in the oven, can include various components and their combinations. Everything suits: eggplant, zucchini, green peas, tomato, bell pepper! Today I will be using: tomatoes, bell peppers, onions, and carrots.

Directions

  1. To cook chicken with vegetables, prepare the ingredients.
  2. Cut the fillet into large slices. Knock off on both sides with the flat side of a kitchen hammer. Rub with spices and salt.
  3. Fry the prepared fillet in vegetable oil on both sides until golden brown.
  4. Grease a baking dish with vegetable oil. Place the meat in a greased dish.
  5. Peel the tomatoes and cut them into slices. Cut the peeled bell pepper into thin strips. Grate the carrots on a coarse grater. Cut the onion into half rings. Grate the cheese on a medium grater. Saute the onions and carrots in oil.
  6. Lay onion with carrots, peppers, and tomatoes on top of the meat, season with salt.
  7. Drizzle with mayonnaise, sprinkle with grated cheese. Pour broth or water into the mold. We will bake the dish in an oven preheated to 200 degrees for 15-20 minutes.
