Chicken Fillet Kebav with Mushrooms and Vegetables (in the Oven)

You don’t have to go to nature, make a fire and cook coals to eat a delicious barbecue. Chicken fillet shashlik on wooden skewers in the oven will turn out, if not better, then at the same level! Chicken pieces are marinated in soy sauce with the addition of ginger, garlic and starch, and then baked in the oven with mushrooms and vegetables on wooden skewers.

Servings: 6

Ingredients

  • Chicken fillet – 2 pcs. (700 g)
  • Sweet pepper – 1-2 pcs. (150 g)
  • Champignons – 10-12 pcs. (150 g)
  • Bulb onions – 1 pc. (100 g)
  • Soy sauce – 100 ml
  • Fresh ginger (root) – 2-3 cm
  • Garlic – 3-6 cloves
  • Potato starch – 1 tbsp
  • Salt – 1/3 teaspoon (to taste)
  • Olive oil – 2 tbsp

Directions

  1. Prepare the required ingredients. Rinse and dry the chicken fillet. For this recipe, it’s best to use fresh, unfrozen fillets, so the cooked meat will be juicier. Peel and rinse the onion and garlic. Not only mushrooms and peppers can be strung on skewers, but also zucchini, eggplants, tomatoes. In the cooking process, you will need wooden skewers.
  2. Cut the chicken fillet into large cubes.
  3. Finely chop the ginger. Pass the garlic through a press or grate on a fine grater.
  4. Combine soy sauce, ginger, garlic and starch in a deep bowl, stir.
  5. Place the prepared fillet in a bowl and cover with the marinade. Leave the chicken in the marinade for 30 minutes, preferably 2-3 hours.
  6. 15-20 minutes before the time runs out, turn on the oven to heat up to 180 degrees.
    Peel the mushrooms and cut into halves. Pepper the seeds and cut into slices about the same size as the fillets.
  7. Cut the onion lengthwise into 4 parts and divide into layers or cut into rings (if the onion is small).
  8. Soak wooden skewers in cold water for 5 minutes. Salt vegetables and mushrooms. Then string chicken fillet, mushrooms, bell peppers and onions in random order on the skewers.
  9. Place the skewers on the oven rack or place them as I do – above the baking dish: the baking dish is sized to fit the skewers, the air can circulate from the bottom and from the top.
  10. With a culinary brush, grease the kebabs with olive oil and send to the oven preheated to 180 degrees for 25-30 minutes.
  11. Turn the kebab over to the other side 1 time during baking.
  12. Chicken fillet shashlik is ready. Finely chop the parsley and sprinkle on the shashlik – the dish can be served!
  13. Such a tender and juicy baked chicken fillet will compete with any meat from the grill! And vegetables and mushrooms perfectly complement it, creating a whole orchestra of taste sensations.
