Khinkali Homemade Self-Made

Khinkali is a national Georgian dish. In no case should they be compared with dumplings, this is a radically different dish, consisting of the first and second courses at the same time. Deliciously delicious thing! In this recipe, I will show you how easy it is to cook samodepny khinkali right at your home!

Ingredients

  • Beef – 600 g
  • Pork – 300 g
  • Wheat flour – 0.5 kg
  • Bulb onions – 2 pcs.
  • Cilantro – 1 bunch
  • Parsley – 1 bunch
  • Cold water – 250 g + for minced meat
  • Egg – 1 pc.
  • Salt
  • Freshly ground black pepper

Directions

  1. I recommend preparing khinkali to start with the dough. Pour flour in a slide onto the work surface and form a hole in the center of the flour slide. Pour cold water into it, add some salt to it. Add the egg. With a fork, begin to gently mix the flour into the water with salt and egg.
  2. Knead the dough with your hands until all the flour from the work surface has been used. Then we knead the dough for 12-15 minutes, until it becomes plastic. We put the dough in the refrigerator.
  3. We cut the beef and pork into large pieces, so that it is more convenient to lower them into the meat grinder. Cut the onion into 4 pieces. Finely chop the herbs.
  4. We pass the meat and onions through a meat grinder. Add salt, freshly ground pepper, parsley and cilantro to the minced meat. Stir the minced meat by adding water. To get the minced meat of the desired consistency, I recommend checking it with a spoon. It is necessary to insert a spoon into the minced meat and it should slowly fall from its own weight.
  5. Roll the dough into a sausage about 5 cm in diameter, then cut into pieces about 1.5 cm thick. Sprinkle the work surface with flour and roll each piece with a rolling pin. The dia of the rolled dough should be about 15 cm.
  6. We take a shallow saucer and place the rolled dough into it. Add 1.5 tbsp minced meat.
  7. We pinch the edges. Cut off the excess dough from above.
  8. Bring the pot of water to a boil. Salt. We dip khinkali into the water. Stir occasionally, cook them for 15 minutes.
