Lean Pancakes with Birch Juice

Original lean pancakes, but not just on the water, but with the addition of birch sap! These pancakes are surprisingly tender and very easy to prepare. Delicious and budget!

Servings: 3

Ingredients

  • Birch juice – 200 ml
  • Water – 200 ml
  • Wheat flour – 150 g (1 glass of 250 ml)
  • Odorless vegetable oil – 30 ml + for greasing the pan
  • Sugar – 1/2 tbsp
  • Soda – 1/2 teaspoon
  • Salt – a pinch

Directions

  1. Sift the flour into a deep bowl, add salt and sugar.
  2. Add birch sap.
  3. Stir until smooth with a whisk. Cover with a lid and leave for 30 minutes.
  4. In a separate bowl, combine 200 ml of boiling water and soda. Stir and cool to room temperature.
  5. Pour the cooled soda water into the dough and stir until smooth with a whisk.
  6. Pour in vegetable oil and mix again.
  7. Heat the pan over medium heat and grease with vegetable oil. Pour about a ladle of dough into the pan and level it along the bottom, gently tilting the pan to the sides. Fry the pancake over medium heat for about 1-2 minutes on each side, until golden brown.
  8. Fry the rest of the pancakes in the same way. You can grease the pan with vegetable oil as needed.
  9. Lean pancakes with birch juice are ready.
  10. We serve them to the table, adding jam, honey, or jam as desired.
