Ingredients

For the dough:

  • 1 kg flour
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 50 ml sunflower oil
  • 1 cube fresh yeast or 2 packs dry yeast
  • 500 ml water, lukewarm

For the filling:

  • 500 g minced lamb or beef
  • 2 tablespoon yogurt
  • 2 tablespoon pomegranate syrup is available in Turkish or Arabic grocery stores
  • 20 g pine nuts
  • 0.5 teaspoon ½ salt
  • 0.5 teaspoon ½ pepper
  • 1 small chilli pepper (s), cleaned and finely chopped

Instructions

  1. Mix all of the dough ingredients together in a bowl. Knead the dough until it becomes nice and smooth. Put some oil on the surface of the dough and cover it with a layer of cling film and 1-2 thick towels. Set the dough aside for about 30 minutes.
  2. In the meantime, prepare the filling by mixing all the ingredients together.
  3. Roll out the dough and cut off several circles, e.g. the size of a saucer. Place a little mince filling without juice in the middle of the dough circle and press the filling a little with the spoon. Then try to make a package from the circle by folding up the dough with both hands, first on one side on two opposite sides and pressing it together, and then on the other sides. Seal the particles well so that the remaining juice does not run out.
  4. Place the pieces on a baking sheet lined with baking paper and bake them in a preheated oven at 225 ° C for 12-15 minutes until they are golden brown.
