Ingredients

For the dough:

  • 225 grams flour
  • 1 egg (s)
  • 75 grams sugar
  • 1 point vanilla sugar, a little salt
  • 150 g butter or mararine

For covering:

  • 800 g apples
  • 1 lemon (s), juice it
  • 3 tablespoon sugar, (45 g)
  • 1 teaspoon cinnamon

For the cast:

  • 3 egg yolks
  • 100 g suar
  • 100 g almond (s), round
  • 180 g cream, (= 12 tablespoon)

Instructions

  1. Put the flour on the work surface and make a well in the middle. Put in the egg. Sprinkle with sugar, vanilla sugar and salt. Put the butter or margarine in flakes on the edge. Knead quickly into a shortcrust pastry and cover and let rest in the refrigerator for 30 minutes.
  2. Peel the apples, remove the core, cut into slices about 3 mm thick. Drizzle with lemon juice.
  3. Mix the sugar and cinnamon in a bowl. Press the dough into a well-greased springform pan, pull out one edge.
  4. Place the apple wedges on the dough like scales and sprinkle with sugar and cinnamon.
  5. Place the mold in the preheated oven on the middle rail.
  6. Bake for 25 minutes on gas mark 5, electric stove at 220 ° C.
  7. In the meantime, stir the egg yolks and sugar in a bowl until frothy. Mix in the ground almonds and the cream loosely.
  8. Take the cake out of the oven and pour the cream mixture over it. Put it back in the oven and bake for another 20 minutes at the same temperature.
  9. Take out of the oven and let cool on a wire rack.
