Meat with Vegetables on Skewers, with Spicy Garlic Glaze

Meat with mushrooms and vegetables on skewers is a convenient and beautiful option for dinner or lunch. Of course, this is not a shish kebab in the real sense of the word, because shish kebab is being prepared in a frying pan, and we are not talking about any smell of haze here, but for convenience, I call it “a la kebab”. The taste can be adapted for yourself by choosing your favourite spices, but I will share my hot glaze.

Ingredients

  • Beef – 250 g
  • Champignons – 4 pcs.
  • Young zucchini – 0.5 pcs.
  • Red onion (small size) – 2 pcs.
  • Bulgarian pepper – 0.5 pcs.
  • Salt (optional) – to taste
  • For roasting:
    Butter – 1 tbsp
    Refined vegetable oil – 1 tbsp
  • For glaze:
    Garlic – 4 cloves
    Hot red pepper – 0.5 pcs. (taste)
    Soy sauce – 2 tbsp
    Maple syrup – 1 tbsp
    Ground black pepper – to taste
    Salt – 1 small pinch

Directions

  1. Dry the meat with a paper towel and cut into cubes. You can lightly salt, but only a little, since we will cover the ready-made kebab with glaze with soy sauce on top.
  2. Cut the onion into thick rings.
  3. Cut the champignons in half. (It is advisable to take small champignons so as not to cut them into halves – in the finished dish, whole mushrooms will look more aesthetically pleasing.)
  4. Cut the zucchini into the same cubes as the meat. Cut the bell pepper into squares.
    We try to cut all vegetables into pieces of approximately the same size.
  5. We string meat, mushrooms and vegetables on skewers.
  6. Peel the garlic and cut it in half.
  7. Cut red hot peppers coarsely enough.
  8. In a mixture of butter and vegetable oil, fry hot peppers and garlic in a preheated pan over medium heat until soft. Remove the pepper and garlic from the pan.
  9. In the same fragrant oil, fry the kebabs in a pan on each side for about 15-20 minutes. The vegetables are al dente.
  10. For the glaze, chop the garlic and hot pepper very finely with a knife, add a pinch of salt and grind into a paste. Add soy sauce, maple syrup and black pepper to taste. We mix everything.
  11. Grease hot kebabs generously with the resulting garlic glaze. We leave for 5 minutes, so that the meat and vegetables on skewers are soaked in hot glaze, and serve. Such “kebab” always looks very nice and appetizing.
