Omelet with Zucchini, Cheese and Herbs

Juicy omelet roll with zucchini, hard cheese, herbs and spices. Simple, quick and delicious – great breakfast.

Serving: 4

Ingredients

  • Zucchini – 1 pc.
  • Hard cheese – 70 g
  • Chicken egg – 3 pcs.
  • Greens (optional) – 7-10 branches
  • Ground paprika -1/2 teaspoon
  • Garlic powder – 1/2 teaspoon
  • Salt to taste
  • Vegetable oil – 2 tbsp

Directions

  1. Prepare all the food you need
  2. Grate the zucchini on a coarse grater. If the skin is tough, it is best to cut it off.
  3. Add lightly salt and leave for a couple of minutes. Then squeeze out the excess liquid well with your hands or with gauze.
  4. Add paprika, garlic and salt.
  5. Beat in the eggs.
  6. Stir everything until smooth.
  7. Add the chopped herbs and stir again.
  8. Heat oil in a skillet. Spread a thin layer of dough all over the bottom of the pan.
  9. Sprinkle with grated cheese.
  10. Once the omelet has “gripped” around the edges, start rolling it into a roll using a spatula. Do not roll up to the end – leave a small edge. Move the omelet roll to the edge of the pan.
  11. Add some scrambled eggs again.
  12. Continue rolling and adding dough until finished, sprinkling with grated cheese each time.
  13. Roll the roll completely and fry a little more on all sides.
  14. Such an omelet roll tastes great both warm and cold
