Omelet with Zucchini and Shrimps

An interesting combination of zucchini and shrimp. The omelet is a hearty but light dish.

Ingredients

  • Zucchini (young) – 1 pc.
  • Butter – 50 g
  • Eggs – 3 pcs.
  • Milk – 3-5 tbsp
  • Shrimps – 100 g
  • or peeled shrimps – 30-50 g
  • Parsley – 2-3 sprigs
  • Basil – 0.5 teaspoon
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Wash the zucchini and cut into strips.
  2. Melt the butter in a frying pan. Put the zucchini and fry them over medium heat, stirring occasionally, until soft (10 minutes).
  3. Peel the shrimp. If they are large, then cut.
  4. Chop the greens.
  5. Mix and lightly beat eggs and milk.
  6. Add shrimp, herbs, basil (mine is dry, but you can take fresh), salt, pepper. Mix.
  7. Spread the fried courgettes over the pan as evenly as possible.
  8. Pour the egg mixture over the zucchini. Cover and fry the zucchini and shrimp omelet for 3-5 minutes. The top should “grab”.
  9. Gently (more accurate than me …) turn over and fry the omelet with zucchini and shrimps for 1-2 minutes on the other side.
  10. The omelet with zucchini and shrimps is ready.
