Ingredients
- 400 g spelled flour, fine
- 3 egg yolks
- 6 tablespoon cream or water
- 1 pinch (s) salt
- 650 ml water
- 100 ml cream
- Butter, for frying

- Mix all ingredients (except for the butter) into a smooth dough and let it soak covered for about 30 minutes.
- Stir the dough vigorously again.
- Heat 1/4 teaspoon butter per pancake in a non-stick pan. Pour the pancake batter into the hot pan in portions with a ladle (thin or thick as you like) and bake until golden brown over a moderate heat.
- Put the finished pancakes in the oven at 80 degrees (top / bottom heat) on a plate.
- This is a basic recipe, suitable for sweet or savory fillings.
- For good eaters, I recommend doubling the amount of ingredients and using any remaining pancakes the next day as a soup (pita soup) or freezing them.
