Ingredients

  • 4 pork schnitzel, (or corresponding amount fillet in slices)
  • 3 tablespoon wild garlic paste (see my recipes)
  • 75 g corn flakes
  • 80 g pecorino, rated, optionally parmesan
  • 4 tablespoon oil
  • 2 egg yolks
  • Fat for frying
  • salt and pepper

Instructions

  1. Flatten the meat a little, fry on both sides, season with salt and pepper, place side by side in an ovenproof dish.
  2. In the meantime, roughly crumble the cornflakes in a freezer bag. In a bowl, mix the cheese, oil, egg yolks, wild garlic paste, salt and pepper to a paste. If too crumbly, add a little more oil.
  3. Spread this mixture over the meat and press it into a closed hood with your hands.
  4. Bake at 175 ° C for about 15 minutes until the top starts to turn brown.
  5. In addition, I serve a colorful vegetable rice mixed with plenty of wild garlic butter.
