Pumpkin and Orange Cottage Cheese Cookies

Cottage cheese cookies with pumpkin and orange are a bright and very appetizing delicacy that goes well with a cup of tea or coffee. Cookies melting in your mouth and fragrant pumpkin-orange jam – an impeccably tasty combination!

Servings: 6

Ingredients

For the dough:

  • Cottage cheese – 185 g
  • Pumpkin – 100 g
  • Flour – 225 g
  • Butter – 75 g
  • Sugar – 65 g
  • Orange (zest) – 0.5 pcs.
  • Baking powder – 1 teaspoon (4 g)
  • Vanillin – on the tip of a knife
  • Egg – 1 pc.
  • Salt – 1 pinch

For jam:

  • Pumpkin – 85 g
  • Orange (juice) – 0.5 pcs.
  • Sugar – 25 g

Directions

  1. Remove the orange part of the zest from the orange with a fine grater.
  2. Break the egg into a bowl or cup and stir it a little with a whisk.
  3. Rub the pumpkin pulp on a fine grater.
  4. We send 100 g of pumpkin to a deep bowl. Add egg, cottage cheese, sugar, orange zest, salt and vanillin.
  5. Beat with an immersion blender until smooth and creamy.
  6. Sift the flour and baking powder into another bowl. Put a piece of frozen butter and roll it in flour on all sides.
  7. We rub butter on a grater, periodically rolling it in flour.
  8. Grind the butter and flour into crumbs.
  9. Add the pumpkin-curd mass to the butter with flour.
  10. Knead the sticky soft dough.
  11. Roll the dough into a ball and wrap it in plastic wrap. We put the dough in the refrigerator for 1 hour.
  12. Let’s make jam. To do this, put the remaining pumpkin and sugar in a saucepan. Squeeze orange juice there.
  13. Stir and put on low heat.
  14. Boil the jam for about 30 minutes, stirring occasionally. Remove from heat and cool.
  15. We turn on the oven to heat up to 190 degrees.
    Take the dough out of the refrigerator. Sprinkle the work surface with flour. Pinch off small pieces of dough and roll out to a thickness of about 0.5 cm.
  16. We cut out cookies using molds.
  17. We spread the cookie blanks on a baking sheet and send them to the preheated oven for about 15 minutes.
  18. We take out the cookies from the oven and cool completely. Grease one cookie with pumpkin-orange jam and top with a second cookie.
  19. Put the finished cottage cheese cookies with pumpkin and orange on a plate.
